Roasted Balsamic Vegetables

My house smells so good! Veggies roasted along with a batch of stuffing. Some cleaning and cooking to do tomorrow. I think we are ready for a crowd. If you are gathering on the eve with friends or family safe journey and full tummies tomorrow. If you don't have anywhere to go...we should have plenty!

Are these vegtables from your summer garden? How about posting a few vegetarian recipes? What vegtables do you like to roast together? Betty

The roasted veggies were part of the Christmas eve meal. Made them the day before and then heated them back up in the crockpot. The recipe is from allrecipes.com search for Roasted Vegetables. Squash, carrots, peppers, and onions are my favorites to roast.
