Raining and dreary outside so it was a busy afternoon with
Meatless Crockpot Enchiladas cooking in the crock and baking a batch of
Baked Tofu Bites. I substitute brown sugar for syrup, red thai chili sauce for hot sauce, and low sodium soy or tamari to make it healthier.
